Portions: 8 to 10

Mix vegetables of your choice (onion, carrots, squash, parsnip, etc.) with a bit of olive oil, sea salt, pepper and dried herbs (thyme, rosemary or oregano). Bake at 450°F (230°C) for one hour.

To caramelize, add 2 table spoons (30 ml) of maple syrup or balsamic vinegar 15 minutes before baking time is over.
